Cucumber Muchim Banchan ("Oi Muchim;" "오이무침")

"Oi" means "cucumber" and "muchim" means "mixed"or "coat/toss" in English. This my Mom's recipe that I've been making since childhood.


I like lighter seasoning, which allows highlights the refreshing cucumber taste, so I am generous with my vinegar. Cucmber muchim is a great side dish or "banchan" for Korean BBQ or any lunch or dinner. It is a staple banchan in most Korean restaurants and households.


Enjoy this healthy, delicious recipe!


Ingredients:

  1. Slice cucumbers into thin slices into a bowl. Pour soy vinegar into the bowl with cucumbers.

  2. Then, add chili powder, minced garlic, and Rx sugar. Mix and taste.

  3. If you like spicy, add more chili powder accordingly.

  4. Mix, mix, mix! Top with chopped green onions and finish with some sesame seeds!

  5. Serve immediately if you like a fresh crunchy texture.

  6. If you like a more pickle-like texture then wait a day or two!
